Tortilla "Cigars"

We made these last week- and they were so yummy! I tweaked this recipe from Jessica Seinfeld's Deceptively Delicious.

Here's what you need:
1 c. chicken or turkey, cubed. (I have found the easiest thing ever- frozen chicken that is pre-cubed! It's such a time saver, and worth the extra bucks)
1/2 c. shredded cheddar cheese
1 c. yellow squash puree (I used butternut squash)
4 oz. cream cheese (fat free or reduced fat works too)
1/4 tea. garlic powder
1/4 tea. salt
6 large (burrito size) whole wheat tortillas

Chop off the stem of the squash, slice in half, and cook at 400 for 50 minutes. Then scoop out the soft insides and throw them into a food processor to puree.

I also used the tines of a fork to make sure there were no lumps.


Preheat the oven to 350 and line baking sheet with aluminum foil or parchment paper. (saves on dishes- yay!)

In a large bowl, stir together the chicken, cheese, squash, cream cheese, garlic powder, and salt.

Cut the tortillas in half. Place one half on the workspace in front of you, the straight edge facing you. Spread about two tablespoons of filling along the edge from one side to the other. Starting at the edge, roll the tortilla into a cigar shape, completely enclosing the filling.


Place seam side down on the baking sheet. Continue until filling is gone.

Bake until the tortillas begin to brown- 4-5 mins. Let cool slightly before serving. Can also be packed away for lunch and can be served cold.

Seriously these look WAY good!! I have them done for my Thursday night meal. I will give you a full report on Friday!
