Easy Pancake Roll-ups

Oops! Forgot it was breakfast week when I posted my enchilada recipe. To make up for it I will post this super yummy "Pancake Roll-up" recipes, which is akin to crepes. I can't take the credit. It came from one of my high school friends Elise Peterson. So easy and so good!

3 eggs
1 cup milk
1 cup flour
1/4 cup sugar
1 tsp vanilla
1/2 tsp salt

Whisk everything together until smooth. Grease a small or medium frying pan and turn heat to medium. Scoop about 1/4 cup of batter onto pan and roll it around so it is fairly thin. Cook one side then the other, until golden brown. Spread on butter, syrup, jam, nutella, powdered sugar, fresh fruit, anything you want... roll up and enjoy! I even like to eat them plain :)

Pita Pizza

Much akin to Pita Tostadas, these are easy to make, and easy to let kids help! I often just buy two packs of pitas and have Pita Tostadas and Pita Pizzas in the same week.

6 Pitas
1 jar pizza sauce
shredded mozzarella cheese
toppings- pepperoni, ham, chicken, olives, onion, green pepper, pineapple chunks, mushrooms, etc.

Preheat oven (or handy toaster oven!) to 350, make up your own pita pizza and arrange them on cookie trays. Cook in the oven for 10 mins, until cheese is melted and golden.

Sweet Potato Pancakes

These were super easy and the bambino LOVED it! Great way to use up a sweet tater before it goes bad!


Ingredients:
2 TBSP butter, margarine, coconut oil (I seriously use it in all mu baked goods now!) melted
1/2 C cooked sweet potatoes, mashed
1 egg
1/3-1/2 C flour (any kind. I did all whole wheat)
1/2 tsp baking powder
1/4 C milk, or more to thin it out


Poke the sweet potato several times with a fork then stick that tater in the microwave and push the "Baked Potato" button. Or cook it for 3-4 mins. Or bake it any way you want. Then mash it up and measure out the 1/2 C.

Then throw everything else in the bowl except about enough oil or butter to put in the frying pan or griddle. Stir it all around. It should have the lumpy sauce consistency of an "instant" type mix.

Cook until bubbles form then FLIP 'em over! 
They're great with some butter and cinnamon and sugar. Or your favorite syrup. Both are great. ENJOY!

My Famous Banana Pancakes

These pancakes are my street cred. for culinary prowess. I piecemealed this recipe together myself! And they are awesome! And healthy! Have kiddos? Freeze 'em and toast 'em in the morning instead of buying Eggos.

 The secret ingredients of my masterpiece!

2 c. flour - you can do all white, or whole wheat, or half & half
2 tbl. sugar
2 tbl. flaxseed meal
4 tea. baking powder
1/2 tea. salt
2 eggs
2 c. milk
4 tbl. cooking oil
1 - 2 bananas, mashed (use the tines of a fork or a food processor)

Mix wet and dry ingredients separately then combine in large bowl until moist, beat on low- batter will be lumpy- and if you use all whole wheat flour, it will be a bit thick. Pour in 1/4 c. portions onto a hot griddle, flip when bubbles appear in the middle.


Some topping ideas: sliced strawberries and whipped cream. Yum!

Butternut Squash Mac

Homemade mac and cheese, with the vitamin A of butternut squash? Yes please. The girls actually eat it, too! (granted, they think the squash are carrots. But I'm ok with this deceit)

What you need:

2 c. cubed & peeled butternut squash (about 1/2 in. cubes)
2 tsp. olive oil
1/4 tsp. salt
1/2 lb. elbow mac (make it whole wheat!)
2 tbl. butter
2 tbl. flour
1 1/2 c. milk
1 1/2 c. shredded cheese (chedder, monty jack, whatever!)

- Toss squash with oil and salt and arrange on a foil-lined tray. Bake at 375 for 20 minutes, until tender and set aside.
- Cook pasta for 2 minutes; (less than package directions) drain and place in a bowl with squash. Meanwhile, melt butter over low heat, whisk in flour; cook for 2 minutes. Slowly whisk in milk, bring to a boil then simmer. Cook 3 minutes, stirring occasionally.

- Add cheese and stir until melted. Stir cheese sauce into pasta and squash. Spoon into a greased square pan, sprinkle extra cheese on top and bake at 375 for 10 minutes.
