Pumpkin Pancakes

I meant to take a picture of these orange beauties, but they were gobbled up too quickly! It is an excellent fall treat!

Large Bowl:
2 c. flour
1 tbl. baking powder
1/2 tea. ginger
1/2 tea. nutmeg
1/2 tea. salt
2 tbl. brown sugar
1 tea. cinnamon

Small Bowl:
2 eggs
1 1/2 c. milk
2 tbl. cooking oil (I've been using coconut oil for everything- here too!)
1 c. canned pumpkin

Mix large bowl ingredients together and whisk small bowl ingredients to smooth. Then combine into the large bowl. Beat until smooth. Scoop in 1/4 c. portions onto skillet on lowish heat. These take longer than normal pancakes to cook through and will be heartier than regular pancakes, too. Taste great topped with butter and syrup.

Easy Pancake Roll-ups

Oops! Forgot it was breakfast week when I posted my enchilada recipe. To make up for it I will post this super yummy "Pancake Roll-up" recipes, which is akin to crepes. I can't take the credit. It came from one of my high school friends Elise Peterson. So easy and so good!

3 eggs
1 cup milk
1 cup flour
1/4 cup sugar
1 tsp vanilla
1/2 tsp salt

Whisk everything together until smooth. Grease a small or medium frying pan and turn heat to medium. Scoop about 1/4 cup of batter onto pan and roll it around so it is fairly thin. Cook one side then the other, until golden brown. Spread on butter, syrup, jam, nutella, powdered sugar, fresh fruit, anything you want... roll up and enjoy! I even like to eat them plain :)

Welsh Breakfast Cakes

No picture- I was not paying much attention, and they were a little burned. Tasted great, just didn't look so good. So I spared you that. If you're looking for a fun alternative to pancakes- these are yummy! And you could use ANY cookie cutter you want! (I used hearts- perhaps a Father's Day idea?)


3 cups (12 3/4 ounces) all-purpose flour
1 cup (7 ounces) sugar
2 teaspoons baking powder
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 cup butter, cut into pieces
2 eggs beaten with enough milk to yield 3/4 cup liquid
In a medium sized mixing bowl, sift together the flour, sugar, baking powder, nutmeg and salt. Cut in the butter until the mixture is a coarse, even consistency. Add the egg and milk. Stir to form a soft dough. Divide the dough in half and working with one half at a time (keep the other refrigerated, especially if your kitchen is warm), roll the dough into a circle 1/4-inch thick. Using a biscuit cutter or other small round cutter, cut circles of dough. Heat an ungreased skillet or griddle over medium heat (or an electric griddle, preheated to 300 degrees). Fry the cakes for about 2 minutes on the first side and an additional 1 1/2 minutes on the second, or until both sides are golden brown. As with pancakes, you’ll have to adjust the heat if you find the cakes are browned on the outside before they are thoroughly cooked in the middle. Repeat with the remaining dough. Keep the cakes warm in a 200 degree oven until ready to serve. Sprinkle with granulated sugar or cinnamon-sugar before serving, if desired. (but still use syrup- tastes so yummy!)

Mini Breakfast Quiche To Go!

First of all, Congrats to all of us on having 100 posts on this awesome blog!!

Secondly, here is an idea for a spin on the recipe Becca posted earlier of the quiche.

I am supposed to eat a lot of protein in the morning on my diet, and so the quiche minus the crust is perfect and pretty much carb-free.

To make these little "Mini Quiche to Go", follow this recipe from Becca. I used about 1/3 of the mayo though. You could use crust like normal, or, spray the cupcake pan very generously and fill. One recipe will make enough batter to fill 9 cupcake spots, not quite a full dozen. I did two batches and used sausage for one and bacon for the other.

After I baked them and removed them from the pan to cool, I placed pairs of each kind in a sandwich bag and froze them. So now on my way to work I just grab a couple and zap them in the microwave. They are pre-portioned so it is great. Make sure you microwave them on 50% power for a minute or two so they don't "cook" too much in the microwave while re-heating. Fast and easy, that's my kind of breakfast!

Sweet Potato Pancakes

These were super easy and the bambino LOVED it! Great way to use up a sweet tater before it goes bad!


Ingredients:
2 TBSP butter, margarine, coconut oil (I seriously use it in all mu baked goods now!) melted
1/2 C cooked sweet potatoes, mashed
1 egg
1/3-1/2 C flour (any kind. I did all whole wheat)
1/2 tsp baking powder
1/4 C milk, or more to thin it out


Poke the sweet potato several times with a fork then stick that tater in the microwave and push the "Baked Potato" button. Or cook it for 3-4 mins. Or bake it any way you want. Then mash it up and measure out the 1/2 C.

Then throw everything else in the bowl except about enough oil or butter to put in the frying pan or griddle. Stir it all around. It should have the lumpy sauce consistency of an "instant" type mix.

Cook until bubbles form then FLIP 'em over! 
They're great with some butter and cinnamon and sugar. Or your favorite syrup. Both are great. ENJOY!

Thrown-Together Frittata

Since we have church early in the day, I am always looking for ways to make breakfast happen quickly. I have found that prepping the night before is VERY helpful. This is such an attempt. I have mixed everything up, and in the morning I will portion the entire mixture into a muffin tin and bake. Breakfast will be ready in less than 20 minutes!

(If you prefer a vegetarian version, leave out the ham and add some spinach or asparagus! If you prefer bacon to ham, use it!
The beauty of this recipe is that you really can use whatever you like or have on hand.)

Thrown-Together Frittata
8 eggs
1 shallot, minced
1 clove garlic, minced
1 handful parsley, minced
1/2 cup milk
1 tomato, diced
1 cup shredded cheese (whatever cheese suits your fancy; I used cheddar)
3 slices of ham, diced
1. Crack eggs into a bowl. Add the shallot, garlic, parsley, and milk. Whisk until light and fluffy.
2. Add tomato, cheese, and ham. Stir gently.

3. Cover and refrigerate overnight.
4. In the morning, section the egg mixture into a greased muffin tin. Bake at 375F for about 15 minutes, or until eggs look set in the center.

BANANA BREAD/MUFFINS

This is Ryan's grandma's recipe and by far the best banana bread recipe I have come across!I make it into muffins! easier for 'serving' or in our case, eating 'on the go'
Preheat oven to 325
1 cup (3) VERY ripe bananas- mine are basically black!
1/2 cup of oil
2 eggs
(put in a large bowl and whip them REALLY well)

In a seperate smaller bowl:
2 cups of flour
1/2 teaspoon of salt
1 teaspoon of baking soda
1 cup of nuts (OPTIONAL)
1 cup sugar

Take the contents of the smaller bowl and dump into large bowl then mix. Grease either loaf pan or muffin tin really well (or use paper cup liners) and fill til about 1/2-2/3 the way full. Bake 1 hour for loaf or 22-23 minutes for muffins until toothpick comes out clean. Enjoy!

My Famous Banana Pancakes

These pancakes are my street cred. for culinary prowess. I piecemealed this recipe together myself! And they are awesome! And healthy! Have kiddos? Freeze 'em and toast 'em in the morning instead of buying Eggos.

 The secret ingredients of my masterpiece!

2 c. flour - you can do all white, or whole wheat, or half & half
2 tbl. sugar
2 tbl. flaxseed meal
4 tea. baking powder
1/2 tea. salt
2 eggs
2 c. milk
4 tbl. cooking oil
1 - 2 bananas, mashed (use the tines of a fork or a food processor)

Mix wet and dry ingredients separately then combine in large bowl until moist, beat on low- batter will be lumpy- and if you use all whole wheat flour, it will be a bit thick. Pour in 1/4 c. portions onto a hot griddle, flip when bubbles appear in the middle.


Some topping ideas: sliced strawberries and whipped cream. Yum!

Whole Wheat Waffles

Okay Becca, you asked I deliever. Becca asked if I had any other uses for the coconut oil and the answer is yes.

Ingredients
1 3/4 C. Whole wheat flour
1 t. Baking Powder
1/2 T. Sea Salt
2 Eggs
1/4 C. Coconut oil ( this is where Becca says, "sweet!")
1 3/4 C. buttermilk ( I have also used regular milk before and it still works out ok, but the buttermilk is really good)

Now whisk all the ingredients together.


Then cook in your waffle iron( if you don't have one, you must go get one, they are awesome! I got mine at Sams club for $30 and it was so worth it.)





















Don't they look yummy?! I usually cook these once every two weeks for my little one. I break them into sections and freeze them. Then in the mornings I just take one out and pop it in the toaster. Once again these are so much cheaper than Egos, not to mention they taste so much better. Plus there are only 6 ingredients in these, if you read the back of store bought ones there is almost over 30 ingredients and I can't pronounce half of them.





















And here is proof that they are Kid approved (cute kid approved if I don't say so myself)
** Some other uses for coconut oil is sauteing or stir-frying. The side of the jar also said that you can use it in your bath or massage it into your skin and you can also apply it to your hair, let sit for 1 hour and then rinse. I have not tried that, but hey!
