Thrown-Together Frittata

Since we have church early in the day, I am always looking for ways to make breakfast happen quickly. I have found that prepping the night before is VERY helpful. This is such an attempt. I have mixed everything up, and in the morning I will portion the entire mixture into a muffin tin and bake. Breakfast will be ready in less than 20 minutes!

(If you prefer a vegetarian version, leave out the ham and add some spinach or asparagus! If you prefer bacon to ham, use it!
The beauty of this recipe is that you really can use whatever you like or have on hand.)

Thrown-Together Frittata
8 eggs
1 shallot, minced
1 clove garlic, minced
1 handful parsley, minced
1/2 cup milk
1 tomato, diced
1 cup shredded cheese (whatever cheese suits your fancy; I used cheddar)
3 slices of ham, diced
1. Crack eggs into a bowl. Add the shallot, garlic, parsley, and milk. Whisk until light and fluffy.
2. Add tomato, cheese, and ham. Stir gently.

3. Cover and refrigerate overnight.
4. In the morning, section the egg mixture into a greased muffin tin. Bake at 375F for about 15 minutes, or until eggs look set in the center.
