The Ultimate Salad!

I didn't get a picture of mine, but it will look something like this


I really don't know what else to call this salad, but no other salad compares to this baby! ;) I got this recipe from my mother in law and tried it out yesterday for a baby blessing I went to. I'm gonna brag a little and tell you that it was a HUGE hit! It made me feel so good that everyone was raving about it! So here it is!



1/2 lb bacon cooked and crumbled (I just bought the already cooked and crumbled ones that come in a little baggie)
small (6 oz) bag craisins
4 oz grated mozzarella
4 oz grated parmesan
4 oz slivered almonds (toasted sugar covered is best)
2 bags romaine lettuce (or you can buy the 'head' and chop it up yourself)



Dressing



1/4 cup chopped purple onion
1/2 cup red wine vinegar
1 cup sugar or splenda
1 tsp salt
2 tsp dry mustard
1 cup veg oil



In a blender or food processor (or I used my magic bullet) combine onion, vinegar, sugar, salt and dry mustard. Blend VERY well. Slowly add the veg oil while blending. Toss all ingredients together in a large bowl, and wala! The Ultimate Salad!



Now, a heads up, this salad gets soggy and wilty within a half day or so, so you're not going to want to toss it all together until right before serving. I put all of the 'toppings' for the salad together in a large salad bowl with a lid, and kept the lettuce separate in it's bags, and the dressing in a container with a lid. Then right before serving I tossed the lettuce and dressing into the bowl.

Broccoli Salad

I tasted this salad a while ago at a pot luck and I loved it so much that I googled the recipe so I could make it for a family party. So all the credit goes to Diana Rattray :)

Broccoli Salad

5 cups fresh broccoli florets
1/2 cup raisins (I used craisins)
1/2 cup sunflower seeds
1/2 cup cooked crumbled bacon
1/4 cup red onion, chopped (I left this out because I don't like raw onion)
1 cup frozen peas, thawed

Dressing
1 cup mayo
2 Tbsp vinegar
1/2 cup sugar

Mix salad together in big bowl. Make dressing in separate bowl. Combine and chill for 2 hours before serving.

Chili Frito Salad

This is one of my favorite summer recipes! It's very simple and tastes absolutely delicious. Here's what you do:
1. Make a salad. (You could even get the bagged kind and just dump it in a bowl. EASY!)
2. Warm up a can of chili.
3. Open a bag of fritos.
4. Get the Ranch dressing out of the fridge.
5. Combine all ingredients on your plate. It can be in any order; I like to put the salad first, then chili, drizzle the Ranch, then top with fritos. However you do it, the end result is a yummy dinner!

Broccoli Salad

I had this Christmas Eve and freakin loved it! SO GOOD!
Ingredients:
brocolli (I just buy a bag at Sams0 but a couple bushels will do)
craisins (a bag)
cashews (or sunflower seeds- I prefer cashews)
1/4 cup chopped purple onion

Optional ingredients: fresh strawberries, grated mozzarella cheese

Dressins: (double if making a large batch)
1 cup real mayo
3/4 cup sugar
3 tsp. apple cider vinegar
salt and pepper

Mix any amount of the ingredients above til it's portortional to how you prefer- it is insanely good!

HINT: once dressing is pouredon salad serve immediately- it does NOT make good leftovers- so if making a large batch, take a small amount, make dressing, keep them seperate til serving- refigerate dressing and salad seperately (if not serving right away)
